How long does it take to cook a standing rib roast?

  • Size: A larger roast will naturally take longer to cook.  
    Doneness: Rare roasts cook faster than medium-rare or well-done.

General Cooking Time:

  • Rare: 15-20 minutes per pound at 325°F (163°C)
  • Medium-Rare: 20-25 minutes per pound at 325°F (163°C)

Important Notes:

  • Use a meat thermometer: This is the most accurate way to determine doneness.
    • Rare: 125-130°F (52-54°C)
    • Medium-Rare: 130-135°F (54-57°C)
  • Resting Time: After cooking, let the roast rest for at least 20 minutes before slicing. This allows the juices to redistribute. 

Should a standing rib roast be covered or uncovered?
